Butter Chicken with a Trini Twist

1: Cut the chicken thighs into cubes and marinate with tandoori powder, garam massala, chilli powder, salt, turmeric, annatto, and kassori methi.

2: In a pan, heat butter and ghee over medium heat.

3: Add chopped onion and pimentos; sauté until soft.

4: Stir in minced garlic and cook for 1 minute.

5: Add steak tomato and cook until softened.

6: Add fire roasted tomatoes, remaining spices, and the marinated chicken to the pan.

7: Cook until the chicken is done, about 30 minutes.

8: Stir in raw cashews and heavy cream, cook for an additional 5 minutes.

9: Garnish with chopped cilantro before serving.
